The growing demand for sustainable, high-quality food requires deeper understanding of structure, from micro to macro scale. X-ray and neutron techniques, combined with advanced microscopy, enable these insights.
By linking structure, processing conditions and properties such as texture and taste, we support development of next-generation foods, such as alternative protein products, low-salt solutions, circular production and improved processing methods.
